Great post Matt. I definately want to try the Sancerre. Maybe because I use to eat a lot of chalk as a child.(heeee) I am just now getting back into white wines. One reason I'm appreciating more whites is because I like to make onion soup a lot. I always use more wine than what usual recipes call for in order to impart more flavor of the grape. The Sancerre seems like a wonderful wine for this. Can't wiat to try it with mussels and cheese, as well.
